“Egg”cellent Options for a Nutritious Meal!

The promise of Spring reminds me of all of new beginnings.  Fruit blossoms, flowers… all that is colorful and bright.  I am a true believer in eggs, fresh from our chickens.  They are so nutritious and versatile.  Can you think of many affordable items that are filled with protein and essential nutrients?  Eggs are a true gem.  They help boost energy and focus your concentration.  Also serve as a great diet food because the protein will keep you full for longer.

  

Some people eat only the whites or choose egg beater options.  I disagree!  There are so many multivitamins within the egg that are missing when you only eat the whites.  Take lutein for example.  It is an antioxidant within the egg yolk that has proven to protect the eye from UV radiation damage from the sun.  

When hard-boiling your eggs, choose eggs that are about a week to 10 days old.  Eggs take about 3-7 days to go from farm to supermarket, so they should can be boiled rather soon.  If the eggs are really fresh, they are so much harder to peel!
